No need to throw away the watermelon rind. Recycle it to a side dish with rice or chapatti.
Ingredients
Chopped the watermelon rind.
Onion 1, garlic cloves 5, green chilli 5, chopped
Grated coconut 1 cup,
Turmeric powder 1/2 tsp., cumin powder 1/2 tsp.,
Coconut oil 1tbsp., red chilli 2, mustard seeds 1/3 tsp.,
Salt to taste.
Cooking method
Steam cook the chopped rind for about 5 minutes.
Heat oil in a shallow pan, drop in mustard seeds, allow to crackle, add red chilli, followed by onion, garlic and salt. Sauté till tender. Add green chilli, stir for 20 seconds add the cooked watermelon, mix well, add the powders and grated coconut. Combine well. The dish is ready. So nice 👍 Fruit and veggie dishes out of watermelon 🍉
