We were out of State. March last week we got back. Some initial preparation in land was needed including daily irrigation and weeding. Managed to sow the spinach seeds on 4th April. On 4th May did the first harvest as part of thinning. Lot of other leafy veggies are with us like Moringa, taro, sambar Cheera etc. Planned a snack for tea. Aloo Spinach cutlet. It is common snack. Home grown spinach is the thrill. Homestead gardening really inspire to decide the ingredients in our food. For us we are so happy to have a better choice in our plates. It is amazing to grow veggies with our own efforts and the pride to share the healthy food. Here spinach, spring onion and coconut oil are our own products.
Ingredients
Spinach a handful bunch,
Potato medium 2,
Onion 1,
Garlic cloves 4,
Ginger 2 inch piece,
Green chilli 3,
Eggs 2,
Bread crumbs 1/2 cup,
Chicken masala 1 tsp.,
Mint and spring onion few,
Salt to taste,
Coconut oil as required to fry.
Preparation
Pressure cook the potato, allow to cool down. Take them out, peel it and chop. Add chopped mint and spring onion into it, mash and keep aside.
Finely chop the spinach keep aside. Finely chop the onion, garlic, ginger and green chilli.
Heat a tbsp. coconut oil in a pan, drop in onion, garlic, ginger and salt. Sauté till tender. Add chicken masala powder and stir for 20 seconds till the raw smell goes. Add spinach and green chilli. Sauté till cooked. Add the mashed potato mix. Combine well. Cutlet mix is ready. Allow to cool down. Form desirable shape patties. Small or medium size.
Break the eggs in a bowl. Add 1/2 tsp., pepper powder (optional) and a pinch of salt and whisk well. Heat the oil in a shallow pan, dip the cutlet in the egg mix, roll it with the bread crumbs and fry to golden brown colour both the sides. Spread them on a tissue layered plate.
Serve hot with your favourite beverage. Green tea 🍵 tea ☕️ coffee ☕️ or black coffee ☕️
